Asparagus Gin Cocktail

What you need:

  • Hussingtree Asparagus Dry Gin, 50ml

  • Sugar syrup, 20ml

  • Lemon juice, 20ml

  • Egg white, 20ml

  • Sprig of fresh rosemary

  • Thin slice of orange (fresh or dried), halved

  • Cooled thin stemmed cocktail or martini glass

 

Preparation

  • Step 1: Create a dry mix using the Asparagus Gin, sugar syrup, lemon juice and egg white. Do this by mixing the ingredients in a cocktail shaker without ice; shake gently for 8 - 10 seconds. By not adding ice at this stage the protein of the egg whites will begin to unravel and mix with the other liquid.

  • Step 2: Add a generous quantity of ice cubes into the cocktail shaker. Shake again for a bit longer, up to 15 seconds, and more aggressively. This enables the liquid to cool and the foaminess that was created in step 1 to strengthen.

  • Step 3: Strain the liquid into a thin stemmed cocktail or martini glass.

  • Step 4: Garnish with a sprig of rosemary and orange slice.
