What you need:
Hussingtree Asparagus Dry Gin, 50ml
Sugar syrup, 20ml
Lemon juice, 20ml
Egg white, 20ml
Sprig of fresh rosemary
Thin slice of orange (fresh or dried), halved
Cooled thin stemmed cocktail or martini glass
Step 1: Create a dry mix using the Asparagus Gin, sugar syrup, lemon juice and egg white. Do this by mixing the ingredients in a cocktail shaker without ice; shake gently for 8 - 10 seconds. By not adding ice at this stage the protein of the egg whites will begin to unravel and mix with the other liquid.
Step 2: Add a generous quantity of ice cubes into the cocktail shaker. Shake again for a bit longer, up to 15 seconds, and more aggressively. This enables the liquid to cool and the foaminess that was created in step 1 to strengthen.
Step 3: Strain the liquid into a thin stemmed cocktail or martini glass.
Step 4: Garnish with a sprig of rosemary and orange slice.
